Stuffed Snapper


1/2 cup diced onion

1/2 cup diced celery

3 cups bread crumbs

1/2 cup crab meat

1 1/2 cups stock or water

2 lbs. Snapper Filets

Minced Garlic



1/4 tsp. tarragon



In a medium mixing bowl place bread crumbs, crab meat, onions, celery, tarragon, and water or stock and blend gently until thoroughly mixed. When the stuffing is complete place a mound of stuffing on center of baking sheet. Next lay two snapper filets over the stuffing making sure to leave the center of the stuffing showing. Next top the fish dish with melted butter, fresh lemon juice, salt, minced garlic and lightly with paprika. Bake on 350 degrees for 15-20 minutes until fish is done. Best when served with favorite white sauce.
