Pecan Festival Salad


8 oz. mixed field greens

1/2 cup blue berries

2 cups fresh straw berries

8 oz. canned mandarin oranges

1/4 sliced spring onions

1 cup pecan halves

2 tbls. butter

2 tbls. brown sugar

4 tbls. seedless raspberry or strawberry jam

3 tbls. garlic red wine vinegar

salt and pepper

Melt butter in frying pan, add brown sugar and pecans, toast slowly over medium heat until pecans are golden brown.

To make vinaigrette add 4 tbls. of the jam to the red wine vinegar, followed by spring onions and pecans. Salt and pepper to taste.

Mix fruit and greens, add vinaigrette-dressing mix lightly. Garnish with blue berries and strawberries.

You can also top with chicken breast or with whole filet of pan fried grouper.
