Cod Chowder

2 lb. Cod Filets, cut into chunks

1/2 cup onion, diced

1/2 cup celery, diced

1/2 cup carrot, diced

6 tbls. butter

3 cups chicken stock

3/4 tsp. Salt

1/2 tsp. white pepper

2 cups milk

3 tbls. flour

2 1/2 cups shredded cheese

1 tbl. parsley, chopped

Remove skin from the cod filets. Saute veggies in 3 tablespoons of butter, add cod, and chicken stock, salt pepper, simmer 5 minutes, Add milk and heat gently. Combine the remaining butter with flour and add it to the chowder. Cook and stir and until slightly thickens, add cheese and stir over low heat until melted, add parsley and serve.
