Crispy Herb Chicken

8 Fresh Split Chicken Breasts

2 cups Flour

6 each eggs, mixed

1 cup of bread crumbs

2 tsps. fresh basil or chervil, chives, dill, garlic, oregano, rosemary or a combination of them.

1 cup of Parmesan cheese

Preheat oven to 350 degrees. Rinse chicken and pat dry with paper towels. Place the flour into the a mixing bowl. Place the whipped up eggs in another mixing bowl. Combine bread crumbs, herbs and Parmesan cheese and place into mixing bowl.

Take each piece of chicken and first dredge it in the flour, then dip in the eggs, then dredge in the breadcrumb mixture. Place the chicken in a shallow pan and bake in the oven for 45 minutes.
