Chicken Jambalaya Bake

1 1/2 pounds chicken breast, boneless,

1/3 cup flour

2 tbl. chili powder

3 tsp. kosher salt

1/2 cup Bold Olive Oil

1 lg. Onion, chopped

1 clove garlic, minced

2/3 cup Basmati Rice

28 oz.diced tomatoes

1/4 chicken stock

1/4 tsp. cayenne pepper

1) Preheat oven to 350 degrees. Dredge the chicken in the combined mixture of flour, chili powder and salt.

2) In a large skillet, brown the seasoned chicken. Remove the chicken, and stir fry the onions, garlic and rice for 3-4 minutes.

3) Mix in the tomatoes and chicken stock and bring to a simmer.

4) Return chicken to skillet, cover and cook for 30 minutes.
