Corn Salad

Corn Salad Ingredients

2 red beef steak tomatoes, diced

5 corn ears, and cooked and sliced off the cob

1 large red onion, diced

2 cups Pesto vinaigrette

1/8 tsp. kosher salt

1/8 tsp. freshly ground pepper

Vinaigrette Ingredients

2 cups of lime juice

2 tbl. water

2 tbl. pesto

1 tbl. garlic, finely diced

1 tsp. sugar

1 tsp. kosher salt

1/2 tsp. cayenne pepper

Prep all the corn salad ingredients and mix together, do the same with the Vinaigrette ingredients.

Mix the Salad and Vinaigrette.
