Oyster Dressing Stuffed Filet Mignon Bacon Wrap

1 cup finely chopped Onions

½ cup finely chopped Belle Peppers

½ cup finely chopped Celery

1 tblsp. Fresh crack black pepper

1 tsp. salt

2 tblsp. Olive Oil

1 cup bread crumbs

1 pt. Oysters chopped

6 oz. Filet Mignon Steak

Slice of Bacon


1)      Preheat heavy sauté pan; Add 2 tblsp. of Olive Oil then cook the first 5 ingredients until tender

2)      Add chopped oysters and cook for 5 minutes.

3)      Add bread crumbs to thicken

4)      Remover from heat and let cool

5)      Using a sharp knife make a split in the side of the steak about ¾ the way through. When the dressing is cool fill in the cavity of the steak; wrap it with bacon securing it with a toothpick

Season with your choice of seasonings and cook as desired
