Chicken Parmesan

  • 5oz       Chicken Breast pounded thin and trimmed
  • Pinch    Salt and Pepper
  • 3each    Eggs
  • 1 cup    Italian Breadcrumbs
  • 3T         Vegetable Oil
  • ½ cup   Red Sauce
  • 2T         Parmesan Cheese
  • 1 each  Mozzarella Cheese Slice

Trim chicken of all fat and pound with a mallet to quarter inch thickness. Season chicken generously with salt and pepper. Beat eggs and create an egg wash. Coat chicken in egg wash and toss in breadcrumbs.

Heat oil in Teflon pan til hot. Add chicken to pan and cook til golden brown on both sides. Add sauce, parmesan and mozzarella to top of chicken and melt in broiler til brown.
