Maple Vinaigrette Dressing

1 tbs finely chopped shallots
1/4 tsp salt
1/2 lemon squeezed
1/2 cup balsamic vinegar
1/2 cup 'good quality' olive oil
1/4 cup maple syrup
1/4 tsp fresh ground pepper

Shake or mix all the ingredients in a jar with a lid or a large mixing bowl
Will keep for 4-5 days

Parmesan Cheese Crisps:

Take a small amount of grated Parm Cheese and place on parchment paper, bake at 375 for 4-6 minutes or until golden around the edges. Remove and let cool - serve on top of salad
