WILMINGTON -- Imagine only spending $21 a week on food. It seems impossible, but some local community leaders are taking that challenge.
Twenty-one dollars a week is the average amount of assistance North Carolina residents receive if they're on food stamps.
Employees at the Good Shepherd Ministry and other local leaders are participating in a food stamp challenge. It's a way to flesh out problems with the system and see how difficult it really is to live on food stamps.
"It's hard to think that there are people who can't go back to eating the way they were after seven days. When I'm done there will still be people who go to bed hungry," said Debbie Kaiser with Good Shepherd Ministry.
The challenge ends Tuesday. Among the participants is New Hanover County Commissioner Bill Caster.
